Short Day and lots of Studying

Good morning everyone! Today is a very short day for me since it is Friday and I get off work at 11a. YAY!!!! To make things even better, Gregg has off work today and is taking me to lunch :) It will be a nice change to actually be able to have more than one meal with him in a day. Even though we will have a nice lunch, I still have a ton of studying to do and it’s getting me a little stressed out. I am thinking coffee will be in the mix somewhere today. But, more about that in later posts- let’s get to my eats from last night and this morning.

Last night, I made the last of our pork chops. This time I decided not to bread them and to bake them with a chipotle marinade, garlic and italian seasoning. I also pulled out some chibatta bread to go with it. These pork chops were perfectly done- not too tough and not too dry either.

Along with our pork chops, I made us side salads. I enjoyed mine with ranch dressing.

For dessert, I had some more ice cream. The only problem is that I didn’t get a picture because I wasn’t messing around with this ice cream- I ate it right out of the container! I never do this but I just dug right into it last night. Oh well, Gregg doesn’t eat the pumpkin ice cream anyways :)

For breakfast, I grabbed 2 vita tops and some Chobani to go.

A night at the coffee house

Good morning all! I am so glad it is Thursday- this week is kind of dragging for me. Even though I am glad its Thursday, I am also freaking out a little because I have a HUGE exam next week Friday. This exam is the biggest one I have ever taken, even bigger than the exams to get into college. This exam will determine the next step in my career so it’s been a little stressful around here. Not to mention, I haven’t even thought about Christmas shopping yet! Where has the time gone?!?!?

In preparation for my exam, Gregg and I headed to the coffee show to enjoy a cup of coffee, dinner and to study. We went to Alterra Coffee where I decided to have the Strawberry Goat Cheese Salad.

I also had the White Bean Chili with bread and a small sugar-free white chocolate au lait.

The salad was wonderful as always, The chili was very different from any other kind I have ever had-but in a good way :) It was nice and hearty just the way I like it! The coffee had the perfect blend of coffee and syrup, last night Alterra did not disappoint.

When we got home, I opted not to have dessert because I was still pretty full from dinner. So, I decided to make our lunches for today. Gregg wanted a turkey sandwich so I made him one then decided I wanted one too. I think it is funny to see how I make 2 different kinds of turkey sandwiches. Here is a picture of both of them- can you guess which one is mine?

If you guessed the mini bagel you were correct :) I also packed up a little 100 calorie muffin, some celery and an apple.

For breakfast, I had my winter favorite: Pumpkin Cranberry Oatmeal. This never lets me down and is always a crowd pleaser.

Good morning bloggies! Apparently, last night I was not in the mood to cook. When Emily came over I decided to just throw in a pizza because I have been feeling a bit under the weather- so this just seemed easier. With our pizza, we popped some popcorn and watched our newest addictions: 90210 and Melrose Place…. gotta love good food and good drama :)

After dinner, Emily and I had some ice cream- okay a lot of ice cream. It was the only food that made my throat better and I’m sticking to it :)

This morning, I decided to take my breakfast to go: greek yogurt and cereal. This combo always holds me over no matter what. Let’s just hope it can get me through my managers meeting this morning…..

New Recipe and A Sneak Peak!

Good Morning Everyone! I know I have been MIA, but I am preparing to take a HUGE exam and haven’t had time to just sit down and blog. But, I didn’t want to leave you all hanging so let’s get to my eats from dinner. Last night Gregg and I decided to have Pork Chops. I haven’t had them in a while so I thought it would be a good idea. The only problem is that there were 6 pork chops- so you will see pork chops 3 different ways this week. (Hey, it’s a good way to spread out a meal!) For my pork chops, I decided to bread them. So, I placed the pork chops in flour, then dipped them in an egg wash. For my egg wash, I took one egg, some hot sauce and some soy sauce and blended it all together. I dipped the pork chop in the Egg wash and then dipped it in my bread crumb mixture which was made from bread crumbs Italian seasoning and paprika. This recipe was out of the world! The pork chops were perfectly done :) I also had some leftover cranberry sauce and crescent rolls with my pork chop.

After dinner, I had some vanilla bean ice cream with a little bit of cranberry sauce on top.

All mixed together! This was a great combo-try it sometime!

For breakfast this morning, I had a Trader Joes Bran Muffin and some greek yogurt. I also mad a misto with some Rice Nog. Just to let you know-I do still drink regular egg nog, this just looked interesting so I tried it. My verdict- it’s pretty much dead on. It tastes like egg nog just not as thick.

For lunch, I packed up the last of my beef stew, some leftover pineapple and some celery. I know it doesn’t look very appetizing. I would be surprised if I even ate this- I do not feel good at all today!

Well, enough about food-onto the most exciting thing yet! We got our Engagement photos!!!! But, because I am mostly a brat, I am only going to show you one for now, so enjoy!

Who’s Ready for Turkey Day???

This girl is! I seriously cannot wait for this day to be over……. I haven’t even gotten to work yet and I already can’t wait to leave :) I love Thanksgiving primarily because of the food and family time. However, the past few years have been a bit different for me. We have Thanksgiving with Gregg’s family and it’s not the same as my own family. I am not saying any of this in a bad way at all- it’s just different but in a good way.

Tonight, I will make my cranberry sauce and my version of pumpkin pie- then I am off to have a few drinks with Michelle. We will head out in the morning bringing all that we are responsible for which is Wine, Beer, Pumpkin Roll, Cranberry Sauce, Pumpkin Pie and the poker table. Yes, you heard me correctly the poker table. We actually have one because Gregg likes to throw a poker party twice a year- and since his family plays poker on Thanksgiving we bring it along.

I imagine that we will play for a while, have a few glasses of wine and talk about the usual- ya know how are you… how’s work… how’s your family… yadda yadda The typical things you ask people when you haven’t seen them in a while. But, this time I know they will ask about the wedding and I am pumped about that! I seriously don’t think I could talk enough about it because I am that excited.

Besides the wedding talk that will occur, I am excited to eat! I love Thanksgiving food and I intend to fully enjoy every bite of it too. I plan on having it all- turkey, stuffing, potatoes, rolls, cranberry sauce and pie! It’s not Thanksgiving without pie! But, this year I am not sure what kind I am going to have… pumpkin or cherry???? I LOVE both so maybe I will have both, either way I am having pie so it will be a win win for me :)

Weekend Fun and Good Eats!

Hi Everyone! I do not know what is wrong with me but I seem to go MIA once the weekends roll around… maybe I should get better at that?? We’ll see… anywho let’s get to my weekend. Friday afternoon was a very lazy one for me. I didn’t want to do anything- so I didn’t. I made myself my favorite Friday lunch-Grilled Cheese! You see, I only eat this when Gregg isn’t around because he hates grilled cheese sammys! I know- he’s crazy :) But I paired mine with a few grapes.

Friday night, Gregg and I decided to stay in and make steak and mashed potatoes for dinner. I love making this because it reminds me of a home cooked meal that my parents used to make when I lived at home.

 

After we were done with dinner, we were off to get some ice cream from Sendiks. Since they were on sale- we both got 2 of our favorite kinds. He got chocolate chip cookie dough and hot chocolate and I got vanilla bean and Egg nog! We used the vanilla bean to go with the awesome raspberry crisp that Gregg made on Wednesday.

Saturday morning before I had to head to class, I heated up 2 vitatops and cut up one apple to hold me over until I got home.

Saturday during the day, we picked up 2 of my nieces and took them to build a bear. Let me tell you- build a bear has gotten expensive. When it costs over $100 for 2 stuffed animals and I feel like I gave up both of my arms and legs; something is wrong. I mean really- over $100 for 2! You should be ashamed of yourselves. Even though it was expensive, my nieces loved it. After the workshop we took them to Noodles and Company where they both got the Mac and Cheese. As if that wasn’t enough after dinner we had to take them for ice cream. I love taking them for the day- not only is it fun to see them so excited but it’s a good way to help out my brothers too.

Sunday morning, Gregg and I made a Caribou Coffee run where I got a large Coffee with Steamed Egg Nog- love this time of year. However, the large was a bit too big for me so I only had half and saved the other half for Monday morning. I also had some pumpkin Oatmeal with my Egg Nog Coffee.

Since we didn’t eat breakfast until noon I wasn’t really hungry for lunch. Our next meal was a new one- Beef Stew. I opted to go with a slow cooker beef stew. All I had to do was add the ingredients and let it do it’s thing for 6 hours in the slow cooker. It was really easy and pretty tasty.

For dessert, I decided to have half vanilla ice cream and half pumpkin ice cream, so good!

For breakfast yesterday, I had a vita top, an apple and the rest of my coffee. For lunch, I had the left overs from Noodles, an apple and some yogurt.

I know that was a lot to take in all at once but that’s what happens when you slack over the weekend. Tonight is all you can eat Sushi at our favorite sushi place and then we are off to look for bridesmaid dresses. Wish me luck!

Wednesday Night Shopping and Good Eats!

Good Morning Everyone! I hope you are all have a great morning-mine is going well because today means only one more day of work for the week :) I have been pretty busy lately so I am really looking forward to a weekend at home. I think this weekend will include some type of soup, maybe some wine and definitely some popcorn with a good movie… I am such a grandma lately but for some reason I really enjoy staying in sometimes. Anyways, onto some food! Monday Morning was a simple bowl of cereal with skim milk.

For lunch on Monday I packed up an apple, some celery with peanut butter and left over Quinoa.

After work, Michelle asked me if I would like to go to dinner with her to Red Lobster and who am I to turn down free seafood??? So, I got the usual shrimp, crab and flounder combo.

Tuesday morning I had a coffee from Alterra along with a piece of cranberry nut bread. If you ever go to Alterra, this bread is a must! Trust me, it has a nice combination of sweetness and tartness. A+ in my book :)

For lunch on Tuesday, I took some light soup, greek yogurt and some pretzels to snack on throughout the day. I love this combo because it is so easy to eat at my desk when I am crazy busy.

Dinner Tuesday night was at Emily’s she made butternut squash pilaf and grilled chicken. That girl can cook, let me tell ya! This was the first time that I had butternut squash and I am hoping it is not my last, it was good! It also filled me up because when I got home on Tuesday night I went straight to bed. Wednesday morning, I made some oatmeal with 1 cup of oats, 1/4 cup of trail mix, water, cinnamon, truvia, nutmeg, cloves and pom seeds. I made enough for 2 servings, so I packed one up and took it with me to work.

I know I took a picture of my lunch from Wednesday, but I cannot find it anywhere. I packed up an apple and a soup at hand. I knew I would be really busy since it was a payroll day so I made sure to have easy to eat foods for lunch. For my afternoon snack, I popped a bag of popcorn and had a can of Cola Zevia. For dinner last night, I made a salad using lettuce, celery, carrots, green peppers and crutons.

I paired my salad with a baked potato covered in a veggie chili topped with sour cream and cheese. This hit the spot when I got home- it reminded me of home cooking.

After I ate dinner, I went shopping with Michelle. I have been looking for a new coat for a very long time now- I want to say a good 2 years. You see, I had a very nice pea coat before I lost weight. Once the weight came off I still had the same coat. I have been looking for one that is the style I want and affordable. After 2 years of searching, I finally found one at New York and Company  Let me know what you think:

 I was happy with my purchases last night. I was especially happy when I got home to see that the fiance made me some Raspberry Crisp! He found the recipe and made it while I was out shopping.

This was awesome! I guess he made it using raspberries, brown sugar, a little bit of butter and some oatmeal. He was a sneaky one last night :) But, that is all I have for now- I will be back later with a new post, have a good day!
