One of my favorite fall foods is Chili. This recipe is a healthy version of your typical chili using ground lean turkey instead of ground beef.
For this, you will need:
Heat a large pot coated with cooking spray over medium heat. Add oil and onion and sauté onion until soft, about 5 to 7 minutes.
Add garlic and carrots and cook until garlic is softened. (I used the garlic that comes in a jar instead, so cook about 2-3 minutes if you use that!)
Add ground turkey and brown meat, about 5 minutes. Stir to break up lumps.
Add chili powder, paprika, cumin and red pepper flakes, tomatoes and tomato sauce, broth and vinegar. Bring mixture to a boil and reduce heat. Cover and simmer until meat is tender, 30 to 45 minutes.
Add beans and pepper (and celery if you like!). Simmer, uncovered, until peppers are done, about 10 minutes. And there you have it!!!! Your Turkey Chili is done!
This recipe makes 5 1-cup servings. The great thing about this recipe is that you can freeze it. Place chili in single serving containers and freeze. When you want to eat your chili, take it out of the freezer and throw on the stove or in the microwave. This is a great way to have a quick wholesome meal!
