Good Morning Everyone! I know I have been MIA for the 4thof July weekend, but if your weekend was anything like mine you will understand. So, let’s get started with what I have been up to, get ready it’s a long one! On Thursday afternoon, I went for a run, did some laundry, cleaned our apartment and took a break for an awesome lunch! My lunch included a grilled turkey and cheese sammy, a side salad with lettuce, pepper and strawberries and a little bowl of jello.



After my lunch, I met up with Gregg and his co-workers at BBC’s. I really didn’t want to drink so I had a diet soda while they all talked about work and activities for the 4th. After Gregg had a few with his buddies we were off to dinner. Dinner had to be pretty quick because we had kickball at 6. So, we decided to stop at Noodles & Company where I had the trio with chicken noodle soup, a salad and shrimp on the side. It has been a long time since I have been to noodles, but let me tell you it was yummy!
When we got home from kickball I had a sweet tooth, but instead of having candy or ice cream, I have a Gnu Banana Walnut bar. I forgot how much I liked this flavor. It tastes just like Banana Bread.

On Friday, Gregg and I made breakfast and I actually got him to try an Amazing Grass Smoothie! In the mix: Orange juice, ice, strawberries, peaches and a Berry Infusion Amazing Grass.


Along with my smoothie, I had a bowl of oats with strawberries.

After breakfast, Gregg and I did some more laundry, picked up a few things from the store and headed off to Janesville to have lunch with his parents and pick up his friend Aaron. We decided to go to Panera Bread for lunch where I had their Strawberry Poppy-seed Salad and soup. This salad is my favorite, I wish they had it all year! After lunch, we picked up Aaron and headed back to Milwaukee to go to Summerfest. We knew we were going to eat at Summerfest, but weren’t sure exactly what. We decided on Buffalo Wild Wings, a new addition to Summerfest this year. Gregg and I had some boneless wings and some wedges.

After we ate dinner, we were off to see Shinedown. However, since they were on a free stage it was packed! So instead of seeing Shinedown, I heard Shinedown. Oh well, it was still fun. So fun in fact that we decided to hit up the Brass Monkey for a few drinks afterwards. On the way Aaron and I decided we needed a picture of us wearing our Sunglasses at Night! So, here we are:

Needless to say it was a VERY fun night, with lots of drinking and good laughs. Now, I don’t do this very often, but we decided to have a few more drinks when we got home and we decided that we were all hungry and ordered Topper’s Sticks. These used to be my go-to food at 3am in college so it brought back some good memories. I know the are so bad for you, but once and a while is okay.

Saturday morning, I woke up around 10:30 which wasn’t too bad for going to bed at 4:00 AM! I needed something fruity and clean, so I made myself a green grass smoothie.

After my smoothie, I took a shower and lounged around for a little bit. We took Aaron back to Janesville, but stopped for lunch. The boys decided they wanted Panera, AGAIN! But, this time, I got the salad with the veggie sammy!

Once we got home from Janesville, we got ready and headed to Summerfest with my brother and his girlfriend. Once again, dinner was at summerfest. For dinner I had a Gyro. This was my first Gyro ever! My verdict: I like it, a lot! It also came withsome chicken and a side of rice. I started eating my Gyro with the pita, but I got full pretty quick so I only ended up eating half of the pita bread, but all of the meat inside. I ate a little bit of the chicken and rice. Overall, it was awesome! I think I may eat Greek food a little more often.

We got home around midnight and I crashed pretty much as soon as I got in the door. Sunday morning, I woke up and was craving granola! So, I decided to have 1/3 cup of pumpkin spice granola, some Chobani Greek yogurt, strawberries and an apple.

Oddly enough this kept me full until dinner. For dinner, we grilled chicken and corn on the cob. I also made a fruit salsa as an appetizer a strawberry goat cheese salad to go with and a diet soda poke cake for dessert. We invited my mom over so I was kind of distracted and I only ended up getting a picture of the salsa!

In the salsa I chopped up 1 mango, 5 strawberries, 1/3 cup of pineapple, and 1/8 cup of onion and mixed it with 2 tbs of oj, cilantro and 1/4 tsp of salt. If you like your salsa spicy, add a jalapeno pepper to give it a kick with some lime juice! The salsa was really tasty and great for a hot summer day!
This morning, I had a bowl of pumpkin oats with a cup of coffee.

For lunch, I made another strawberry and goat cheese salad.

This salad is to die for if you like goat cheese. It is a spin off on the salad I get from Twisted Fork. for my salad mixed a few hand-fulls of spinach, 5 strawberries, a little onion together and topped with a creamy goat cheese. I also packed up an apple and a fiber one granola bar.

As much as I loved being off of work for vacation and the holiday I am really glad it’s all over. With vacations and holidays comes food that isn’t the best for you and I am ready to get back to the healthy person you usually see on this blog!
